It’s a fundamental knife used to remove the bones from the meat (usually) before the cooking.
The length of the blade can be different in reason of its use.
The 14 cm. Blade model will be very good for small cuts (eg. game), the version with an 18 cm. Blade will be more suitable for big-sized animals (eg. Caws).
It’s one of the most used knives together with the Butcher Slicing and Butcher knife.
